Stardust, though a jazz standard, will never fail to evoke something new based on the rendition heard. Whether it's the original sound by Hoagie Carmichael, or the transforming classic that is Coltrane's 1958 recording, Stardust is nothing short of compelling. Though its lyrics may be somber, its composition is both sentimental and universal.
Origin Story
Produced by brothers Elias and Shady Bayter, this combination red & yellow caturra is considered a staple of farm El Vergel. Located in Tolima on the mountains of el Ruiz (a volcanic nutrient rich soil), this guava banana is something special. Through anaerobic fermentation, they have been able to control both temperatures and ph levels (ensuring complex coffee profiles with their intermittent drying processes and silo finishings). Though they’re now considered experts in producing interesting and exciting crops, this brotherly duo didn’t start their agricultural journey in coffee. Like many families of the region, they learned through their parents' guidance (but that generation of Bayter actually specialized in avocados). Taking the skills learned from that experience, Elias and Shady took the plunge and planted their first coffees in 2012 (later transforming the entirety of the farm to coffee by 2016). They have since continued in their passion, and we’re lucky to experience the fruits of their labor.
