The decaf version of our Ghost note is drenched in the flavors and aromas of chocolate, citrus fruits and slight floral notes. This coffee provides hidden complexity and rhythm. Like its name, the flavor notes of this light roast are subtle yet spirited. That’s the beauty of the “Ghost” note.
Origin Story
Finca Pachuj spans 387 hectares across the mountainous terrain of the Atitlán region and has been Rainforest Alliance Certified since 2000. 57 Hectares of farmland are devoted to coffee cultivation, leaving the rest as a natural reserve. The producer, Andres Fahsen, is the 5th generation coffee producer of the agro-forest farm, Santo Tomás Pachuj, located in the Atitlán region near Volcan Tolimán. Pachuj is a Kaqchikel word meaning “where the mist meets the forest”. This word could not be more accurate in describing the micro-climate of this region. In between the lowlands and the highland in the Atitlán region, there are high levels of humidity and many places where the clouds and the forests meet to make a climate specific to this area of Guatemala.
Decaffeination Process
The Swiss Water Process is a completely chemical-free method of decaffeination using only water to remove 99.99% of the caffeine, leaving only the delicious natural flavors of the coffee.
